If you're making lots of limonade, or if you're freezing lemon juice for
future use, you're going to have loads of lemon peels left over. I say
this is juicing lemons the right way, because being the lemon wizards
that we are, we have a use for those peels too! So before you get to
juicing, scrub your lemons clean and peel them carefully, keeping the
lemon structurally sound on the inside. In other words, peel all of the
lemons (except one, you'll see why in a minute) without injuring the
outer membrane that keeps the juice and pulp held together nicely.
First, slice the lemon with the peel intact and juice it. You now have a hollowed out peel that will help you juice the rest of your peeled lemons. Slice each peeled lemon in half (the same way), and juice it using the reserved, hollowed out peel as a surrogate peel to keep it on the juicer and to prevent your hands from hurting. Make sense? I apologize for no pictures, but I don't have a camera. Soon I will! Since you have two hollowed out lemon peel halves, they should stay together pretty well for all of your juicing. Now you have a container of juice, which you can put in the fridge for whatever you had planned.
You now have lots of fresh lemon peels to be used in lots of other ways!
**Please note: I do NOT recommend juicing lemons with a Vitamix or blender. You would of course get extra nutrition that way, but it will be bitter and sour and the amount of sugar or alcohol one would have to add to enjoy the stuff would completely negate the nutrition. Go get an electric citrus juicer, cuz you want delicious lemon treats!**
